| Preparation:Enjoy the wheat in warm water, the beans overnight in cold water and the chickpeas in a warm salt water. Drain chickpeas and rinse the beans and in separate pots. Add the cold water and bring to a boil. Cover and let it simmer until very tender. Drain. Remove the skins of the chickpeas. Chop the dried apricots and figs in hazelnut-sized pieces. Pick off the stems of the wash currants and cover with water. 10 minutes to cook and drain.Wash wheat and leave the drain. Place the wheat in a large pot with 5 liters of water and 1 tbsp sunflower oil. Bring to a boil and cook covered over low heat begin stirring occasionally to prevent. If the wheat is tender to the point of mushy, add the currants, and cook for another 5 minutes, stirring occasionally. Stir in the grated orange rind, stirring, chickpeas and beans, all the time. Simmer for another 5 minutes or so. Add the dried apricots and sugar. |
