Ingredients:

  • 6 table poons rice
  • 4 cups water
  • 4 egg yolks
  • 10 cups milk
  • 1 cup (200 gr) sugar
  • 1 teaspoon crushed mastic
  • 6 tablespoons (40 gr) wheat starch
Preparation:Pick over the rice to drain wash and drain. Add the rice with cold water, bring to a boil and simmer over medium heat until the rice grains are soft. Relieves the excess water. Blend the wheat starch with half a cup of water. Crush the mastic with a little sugar in a mortar. In a separate pot of egg yolk and stir in the milk. Add the sugar, cements and cooked rice, stir over medium heat until the mixture comes to a boil. Gradually stir in the diluted wheat starch. If the mixture begins to bubble pour in ten casserole dishes. Place the bowls in a deep baking pan and pour water into the tray halfway up the sides of the cups.
Bake in preheated oven at 200 ° C, until a brown skin formed on top for 25 minutes. Serve cold.
