Ingredients:

  • 500 gr. white beans
  • 4 medium sized tomatoes
  • 1 bunch parsley
  • 3 dry onions, medium salt
  • 1 teaspoon rad pepper
  • black olives

for the dressing:

  • 1/2 cup olive oil
  • 1 tea spon vinegar
  • 1/4 lemon iuice salt

Preparation: Wash the beans and enjoy: overnight in cold water. Cover with cold water and bring to boil boil.When, remove from heat and set aside.
Return to cook beans in their soaking water, simmer gently over low heat, let cook, but still intact. Salt 1 1 / 2 hours cooking. When tender, drain and add the beans into a bowl.
Crush onions with some salt. Then cut into thin slices into half circles. combined in the hot beans with lemon juice, vinegar and oils. Add the chopped herbs and give salad chill for 1-2 hours.Serve enter into a deep bowl. Garnish with green pepper, cut into slices and quartered hard-boiled eggs cut off. Wash and chop the parsley and save a little later.
